Vegan Spring Salad Recipe


We've come up with a delicious salad that's great for these warmer days. With crunchy green apples, tangy sundried tomatoes and earthy walnuts, this salad not only tastes amazing but is packed with nourishing ingredients and pasta to help keep you full.

Ingredients 1 bag of spinach 1 cucumber

2-3 handfuls of pasta (we use spinach farfalle)

6-8 sundried tomatoes

Cheese (we use vegan feta)

1-2 handfuls of walnuts 1 green apple

Dressing: lemon juice & agave syrup Method 1. Cook the pasta according to the instructions on packet.

2. Roughly chop all ingredients and add to a large mixing bowl. 3. Add 2 tbsp of lemon juice & 2 tbsp of agave syrup and ensure all ingredients have been coated. 4. Add the cooked pasta and mix. 5. Season with salt & pepper and enjoy!

This salad will keep in airtight container for 2-3 days.
