Vegan Poke Bowl Recipe



Poke bowls make a packed nutritious lunch or dinner and are a great way to use up leftover veggies! Not only are these quick and easy to make, they’re also cost effective and fun to put together. There’s no exact recipe for a poke bowl but below are some suggestions: Rice Try starting with rice as your base, it’s full of fibre and will keep you full throughout the day. Pulses/Protein You’ll want your poke bowl to have some protein. Traditionally made with raw salmon or tuna, a good vegan alternative would be crispy tofu, roasted chickpeas, black beans, barley or quinoa. Nuts are also a good source of protein, you can try adding chopped peanuts, pistachios or cashews! Veggies How about adding avocado, spinach, green beans, tomatoes, sweetcorn or red cabbage! See what you’ve got in your fridge and go from there. We like to go as colourful as we can! Toppings/Sauce Again, have a look in your cupboard as it’s really up to you what you think will work well with your chosen veggies. We like sprinkling sesame seeds, chopped spring onions, a dollop of hummus or some sriracha for a spicy kick!
