Creamy Avocado Pasta Recipe


We just love the versatility of this recipe, it's great for using up any leftover veg once you have the sauce made to create a delicious and super quick meal. It makes a perfect lunch or dinner in the sunshine! Ingredients 1 avocado 1 handful of fresh basil 1 tbsp of olive oil 1-2 cloves of garlic or 1tsp of garlic powder/paste pinch of salt and pepper (to taste) lemon juice (to taste) Cooked pasta for 2-3 servings Method 1. Start by cooking your pasta in salted boiling water according to the instructions on the packet.

2. While the pasta cooks, make the sauce, for this you will need a blender or food processor. Add the garlic and basil and pulse until combined.

3. Add the lemon juice, oil, avocado, and 1 tbsp water and process until smooth, you may need to stop to scrape down the bowl. If the sauce is too thick, add another 1 tsp water to get a sauce consistency. Add salt and pepper to taste.

4. Drain the pasta and place it back in the pan. Add the avocado sauce and stir until combined.

5. Top with any veg of your choice, we love adding some fresh cherry tomatoes, cooked courgette and a handful of cashews. You can get really creative with this recipe, try adding some tahini or nutritional yeast for more of a nutty flavour!
