5 Delicious Vegan Recipes To Try

There are so many delicious vegan recipes out there - from so many vegan cookbooks, bloggers, and magazines - it's hard to know where to start! We've put together a list of 5 of our favourites from 5 brilliant vegan food bloggers and writers. We think there's something for everyone in this list!


#1: Sun-Dried Tomato Chickpea Burgers


This burger is absolutely delicious and it fits the two burger essentials: it must be delicious, and it must be able to hold its own. That is, we don't want it to crumble all over our hands when we bite into it. Hooray! We love the combo of chickpeas, herbs, tomatoes, and a big wallop of garlic - pair it with your favourite burger toppings and invite some friends!



#2: Spicy Peanut Butter Stir Fry


Stir fries are a great way to use up any leftover veggies you have in the house, but we love packing flavour into them to make them more exciting! Plus, it's a super quick vegan dinner option if you're pushed for time. Making your own sauce from scratch means you save on plastic or foil packaging the pre-made ones come in, plus you know it's made with fresh, delicious ingredients with no unknown additives. It's super easy to make, just whizz up the ingredients in a blender, and you can always alter the levels of spice or syrup to suit your taste.



#3: Cashew Pesto Pasta


This list wouldn't be complete without a recipe from Deliciously Ella - it's all in the name, her recipes are delicious! She has multiple cookbooks filled with vegan recipes but she also have some you can try out on her website, and we love this pasta as it's super creamy - proper vegan comfort food. It's a blend of homemade cashew milk with avocado which makes an incredibly creamy sauce, and the lemon, basil, garlic and yeast flakes make it super flavourful too. A nice, quick easy recipe to try on a lazy Sunday afternoon!



#4: Courgette & Leek Frittata


We were a bit sceptical when we saw this one too - frittata, isn't that egg? But this recipe recreates the chewy texture with tofu and chickpea flour. This is a great recipe to try with any veggie leftovers you have, as you can swap out the courgette and leek for whatever you need to use up from your fridge. Mushroom and leek would be delicious, or courgette and red pepper! A great idea for a weekend brunch - plus, adding some nutritional yeast flakes gives it a little cheesy taste.



#5: Chipotle Tofu Rainbow Wraps


These wraps are perfect to bring to work for lunch! They're easy to make and easy to pack, so the perfect portable lunch. They're filled with healthy veggie goodness, with the tofu makes it extra filling and the hummus makes it extra flavourful. Plus, its super easy to make it gluten-free as you can just use a gluten-free wrap!
